Kick Off the New Year Right

After an indulging and relaxing/lazy 3-day weekend, I decided I'd go full-throttle and shock my system.  Today, was the first day back to work quite busy, but afterwards I went to spinning then did laundry!  I'm tired and ready to go to bed, but I feel pretty great about my intense, sweaty workout and doing the most productive thing I could - laundry.   I thought this was a great way to kick off the new year.

Well I really have to go the grocery store so I had nothing to bring for lunch (or at least nothing appealing). I ended up going to Dominick's and getting some spicy salmon sushi.

I ate 2/3 of this.  The last row looked slightly discolored (sorry to gross anyone out) so I decided to skip it to be on the safe side! In the afternoon, I  also nibbled on some "Cheez-Its".  I use quotation marks because they were the store brand.

Like I mentioned before, I went to my Monday spinning class that I love!  It felt sooo good to be back! I certainly worked up an appetite so I was so excited when I remembered Katie said she was cooking tonight.

The spread:
  • Salad with some kind of tasty homemade dressing- not sure what was in it besides honey, which I saw her whisk in there
  • Roasted garlic spread on toasted baguettes (YUMMMM!)
  • Vegetarian Lasagna (In typical Katie fasion, the sauce, the pasta, and cheese were all from scratch)
Picture of the lasagna- look at that cheesy goodness:)

Here's my plate:

OMG this dinner was so good.  There are only 2 pieces of the garlic bread on my plate, but I was slightly addicted to these guys! I had a few more than what is pictured:)

Good night!
