Well I did take pictures of my dinner last night, so I'll start with that. I had Cheese Tortellini with Garlicky Spinach. Pretty typical, huh? Well I had about 2/3 of bag of spinach left. I bought it when I was craving spinach earlier in the week and have not made a salad since. It was going to go bad if I didn't use it soon, so I mixed it with some tortellini! First I sauteeed the spinach with 3 cloves of garlic (I like it strong!) in some EVOO. Then just stirred it all together and sprinkled some red pepper flakes and parmesan.
That was a very lovely, garlicky dinner. I cooked all of the tortellini up so you'll be seeing it again!
Breakfast was Cinnamon Blueberry Oats:
In the bowl:
- 1/3 cup oats, skim milk, water
- a heaping 1/3 cup of frozen blueberries (probably closer to 1/2 cup)
- drizzle of agave nectar
- spoonful of ground flax seed
- crumbled up Kashi Cinnamon Harvest Shredded Wheat as a topper
- spoonful of almond butter stirred in at the end
I think the picture looks kind of messy and a little gross, but trust me it was delicious! Btw, I'm very happy to have some almond butter back in my life. I hadn't replenished my stock in over a month! I use Trader Joe's Creamy Unsalted. It's the cheapest I've come by and very tasty. Anyone else know of a good, cheap* almond butter? (*cheap is relative here)
