Artichoke and Cannellini Linguine

So it's been almost three months since I posted last! I've had some big changes- two moves and a new job! I'm now over a month into my new job and about settled into my apartment and I'm feeling it's time to blog again. While it was a conscious decision to break from blogging during the chaos of a lot of change, I really did miss it!

When I saw this recipe on my daily Real Simple recipe emails, I thought "this is so me" :) It's quick, easy and sounded delicious! Here's the original recipe from Real Simple, I made a few changes based on what I had on hand.

Artichoke and Cannellini Linguine
Makes 4 servings

Ingredients:
  • 1/2 lb whole wheat linguine
  • 1/4 cup olive oil
  • 4 cloves of garlic, chopped ( I love my garlic)
  • 1 can cannellini beans
  • 1 can artichokes, cut into smaller pieces
  • salt
  • pepper
  • parmesan
  1. Cook the pasta as directed (before draining, save ~1/2 cup pasta water).
  2. In a skillet over medium heat, combine the oil and garlic.
  3. After about a minute or two, add the artichokes, beans, salt and pepper to the skillet with the oil and garlic.
  4. Once the pasta is done, combine the pasta and reserved pasta water in the skillet and toss together with parmesan cheese.
  5. I also topped mine with more parmesan!

So great and tasty! I had one bowl tonight and I have 3 tupperware single servings for later in my fridge and freezer.


This recipe was especially great because, not only is it great flavor, but it was ready in 20 min after I put the water on the stove!
