To kick off fall properly, I made some pretty darn amazing pumpkin chocolate chip cookies...if I do say so myself! I did a google search for some inspiration, but in the end I came up with my own recipe. These are a must-make!
Pumpkin Chocolate Chip Cookies
Ingredients:
- 1 stick of butter (softened)
- 1 cup pumpkin (canned)
- 1/2 cup granulated sugar
- 1 cup brown sugar
- 1 teaspoon vanilla
- 1 1/4 cup all-purpose flour
- 1 cup whole wheat flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 teaspoon pumpkin pie spice
- 2 eggs
- 2 cups chocolate chips
- Preheat the oven to 375 degrees.
- In a medium bowl, combine: all-purpose flour, whole wheat flour, salt, baking soda, baking powder, and pumpkin pie spice. Mix well.
- In a separate large bowl, combine: butter, pumpkin, granulate sugar, brown sugar, and vanilla. Mix until smooth with an electric mixer (on low! Overmixing is bad for the texture).
- Mix in one egg at a time.
- Gradually mix in the dry ingredients until well combined.
- Stir in the chocolate chips.
- Use a small ice cream scoop or large tablespoon to scoop out the cookies onto the baking sheet.
- Bake for 9-11 min.
I loved these cookies! And so did my co-workers (or at least they did a great job of pretending)! They are the perfect way to start the pumpkin season!!
